Agastache foeniculum
Certified Organic anise hyssop, hand-harvested and dried at peak aromatic potency on our small farm in Charlevoix, Quebec. With its sweet licorice-mint flavour and uplifting floral aroma, anise hyssop is one of our favourite herbs to grow and one of the best loved tea herbs we sell.
Why Our Anise Hyssop
- Certified Organic, grown on our small farm in Charlevoix, Quebec
- Hand-harvested when the flower spikes are just past full bloom, when the aromatic oils in the leaves are most concentrated
- Dried low and slow to preserve colour, aroma, and the volatile oils that carry the flavour
- Leaves and flowers dried together as a single product — the flowers add visual beauty and a slightly milder aromatic note alongside the stronger leaves
Our anise hyssop is grown in seasonal batches. Current stock is in and should carry us through to our next harvest in August.
Key Uses
- Tea, hot or iced — on its own or blended with lemon balm, chamomile, or rose petals
- Infused honeys, syrups, and herbal vinegars
- Baking and culinary applications — cookies, shortbread, cakes, fresh salads, and as a garnish for desserts and cocktails
- Herbal sachets, potpourri, and facial steams
How to Use
For tea, steep 1 to 2 teaspoons in 250ml of just-off-boil water for 10 to 15 minutes, covered. For brewing details, blending partners, and other preparations, see our guide on anise hyssop uses. For culinary applications including recipes and cocktail syrups, see cooking with anise hyssop.
A Note on Names
Anise hyssop (Agastache foeniculum) is often confused with true hyssop (Hyssopus officinalis), but they are different plants with distinct properties. Anise hyssop has a sweet, licorice-mint flavour and is a Certified Organic perennial that we re-seed annually for maximum yield in our Charlevoix fields. True hyssop is a more bitter perennial used primarily by distillers like our friends at Menaud or Mt. Defiance for absinthe. We grow both. Anise (Pimpinella anisum), a third commonly confused plant, is unrelated — a Mediterranean annual in the carrot family grown for its seeds.
