Fresh Marshmallow Root: Uses, How to Order & Why It's Worth It
Most people only ever meet marshmallow root dried: pale, cut-and-sifted, faintly sweet. Fresh marshmallow root is a different material. Cut a piece the day it comes out of the ground and the surface turns slick almost immediately; that is the mucilage, the whole reason herbalists use this plant, at its absolute peak. Once a year, for a short window in September, we dig it, pack it with ice, and ship it the same day.
This guide covers what fresh root does that dried cannot, how to use it in the week you have it, and how ordering from our farm works. For the deeper story on why mucilage matters, see our guide to marshmallow root for gut health.
Why Fresh Marshmallow Root Is Different
Mucilage is water-soluble and delicate. Every step between the field and your kitchen costs some of it, which is why our fresh root is shaken clean rather than washed; water on the cut surface starts pulling the very compounds you are paying for. It arrives field-fresh, and you will know it when you open the box: good fresh root is off-white to pale yellow, smells cleanly earthy, and draws mucilage the moment you cut it.
Fresh root does not wait. Quality falls away quickly once it is out of the ground, which is why we ship the day we dig and why our wholesale customers process it the day after it arrives. Refrigerate it the moment it lands and plan to work through it within a day or two. That short window is not a flaw; it is the trade. You are getting the plant at a potency that dried root, however carefully handled, cannot match.
What You Can Do with Fresh Marshmallow Root
Cold Infusions at Peak Potency
The classic preparation, and the one that shows off fresh root best. Chop the root, cover it with cool water, and let it stand several hours or overnight; the water turns silky and faintly sweet. Cold water extracts mucilage more completely than hot, and fresh root gives a noticeably thicker infusion than dried.
Herbal Syrups
A gentle decoction over low heat, combined with honey, makes a classic soothing syrup. Keep the heat low; mucilage does not appreciate a hard boil.
Glycerites, Not Tinctures
Here is something many suppliers will not tell you: marshmallow root does not tincture well in alcohol. Mucilage is water-soluble, not alcohol-soluble, and a high-proof extraction leaves the best of the root behind. The right liquid extract is a glycerite: fresh root macerated in vegetable glycerin, cold, for four to six weeks. If you have only ever tried an alcohol tincture of marshmallow and wondered what the fuss was about, that is probably why.
Topical Preparations
Fresh root poultices and skin preparations are traditional uses, and the fresh material's slip is exactly what you want there.
Culinary and Craft Uses
The original marshmallow confection was made from this root, and a handful of our fresh-root customers are beverage producers and distillers chasing that heritage. The young leaves and flowers are edible too.

About Our Fresh Root
Our marshmallow is certified Organic, grown in Charlevoix, Quebec, on the north shore of the St. Lawrence. The roots we dig have been in the ground two full seasons, and September digging catches them as the plant sends its energy back underground, when the root is at its heaviest and most mucilaginous. We only ever lift part of the stand in a given year, about a hundred kilograms of root, and leave the rest growing; a root crop managed that way stays healthy, and so does the supply.
The plant gives two harvests here: the aerial parts come off in August and go straight onto our drying racks, and the roots wait for the September dig. Root handling is deliberately minimal: dug, shaken clean, never water-washed, packed with ice, and shipped the day they leave the ground. That shaken-never-washed standard is exactly how the professional herb houses we supply specify their fresh root, and we have been supplying fresh marshmallow root to Quebec's herbal trade since 2023. What arrives is as close to standing-in-our-field as a courier box allows.
How to Order
Fresh root is a pre-order product with one shipping window a year:
- Pre-orders are open ahead of each September harvest and close as digging approaches
- Minimum order: 5 kg (about 11 lbs)
- Ships mid-September, same day it is dug, packed with ice
- Larger quantities: contact us for wholesale pricing
Most of our fresh-root customers are herbalists, small-batch producers, and serious home practitioners who plan their year around harvest windows like this one. If that is you, get in touch and we will reserve your quantity. Dried Organic marshmallow root and aerial is available year-round.
Storing and Using Your Fresh Root
Refrigerate on arrival and work through it within a day or two; the herb houses we supply process theirs the day after delivery, and that is the standard the material deserves. Anything you cannot use straight away, dry immediately: slice thin, and dry in a dehydrator at 35 to 40°C until fully brittle. Home-drying your own fresh root gives you a dried herb whose every hour of handling you controlled, from field to jar.

A Note on Safety
Marshmallow is one of the gentler herbs, but its mucilage can slow the absorption of oral medications, so take marshmallow preparations an hour or two apart from any medication, and check with a qualified practitioner if you are pregnant, nursing, or managing blood sugar.
Frequently Asked Questions
How long does fresh marshmallow root last?
Not long, and that is the point. Quality drops quickly after digging, so refrigerate on arrival and process within a day or two. Anything you cannot use straight away should be dried: sliced thin, 35 to 40°C in a dehydrator, until fully brittle.
Can I make a tincture with fresh marshmallow root?
Alcohol is the wrong solvent for this plant; mucilage is water-soluble. Make a glycerite instead: fresh root macerated cold in vegetable glycerin for four to six weeks.
Why isn't the root washed?
Water on cut or bruised root surfaces begins dissolving the mucilage before you ever use it. We shake the roots clean and leave the washing to you, right before preparation.
When is fresh marshmallow root available?
Once a year. We dig in mid-September and ship the same day; pre-orders are taken in the weeks before the dig, reserved in order received, with a 5 kg minimum.
Is fresh root better than dried?
For mucilage-forward preparations, cold infusions, syrups, and glycerites, fresh is noticeably richer. Dried root remains excellent for everyday tea and is available year-round.
