Artemisia pontica, (also known as little absinthe, petite absinthe or Roman Wormwood), is a low-growing perennial herb native to Europe. Smaller and more delicate than its cousin Artemisia absinthium, Roman Wormwood carries a complex, slightly bitter flavor and a distinctive aromatic profileโmaking it a defining ingredient in traditional absinthe formulas.
But its uses donโt stop at spirits. Roman Wormwood has long been valued in folk medicine for digestive support and is sometimes included in tea blends or herbal bitters.

How to Use

For Absinthe Making: Use during the coloring step (not distillation) to impart flavor, aroma, and the traditional green tint.

In Vermouth & Bitters: Add small amounts to bitter blends to balance sweetness and enhance herbal complexity.

As an Herbal Tea: Roman Wormwood is very bitterโbrew sparingly or blend with milder herbs like chamomile, peppermint, or lemon balm.

Grand Wormwood (Artemisia absinthium) โ Grand wormwood delivers strong bitterness and iconic absinthe backbone. This plant glows silver at dusk on our farm and is my favorite crop to catch a glimpse of just after sunset.

Hyssop โ Hyssop adds bright, resinous-mint aromatics and subtle green coloring. There's a lot of competition for the honor but hyssop is one of our top attractor of our favorite pollinator the bees.

Lemon Balm โ Lemon balm provides soft citrusy sweetness to balance bitter edges. Beautiful, soft, refined, albeit a little bit sensitive on our farm to the cold winters, melissa officinalis is a quiet fan favorite.

Peppermint โ Peppermint introduces cooling, crisp freshness that lifts heavier flavors. What's there to say.ย We know it, we love it, we want more of it.ย

Sweetflag (Acorus calamus) โ Sweetflag lends warm spice with a soft, gingery bite.ย Very uncommon and little known, our acorus calamus x americanus grows in the wettest areas of our farm and has a unique taste resembling ginger.ย Beautiful and different.
